A deliciously balanced treat packed with protein, fiber, and comforting fall flavors — perfect for breakfast, a snack, or dessert!

Chia Pudding Ingredients

  • 1 cup cottage cheese
  • ½ cup milk of choice
  • 2 tablespoons chia seeds
  • 1 teaspoon vanilla extract or vanilla bean paste
  • 2 tablespoons natural or sugar-free maple syrup

Chia Pudding Instructions

  1. Add cottage cheese, milk, chia seeds, vanilla, and maple syrup to a blender.
  2. Blend until smooth and creamy.
  3. Divide the mixture evenly into two mason jars or bowls.
  4. Place in the refrigerator while preparing the apple crisp topping.

Apple Crisp Topping Ingredients

  • 2 apples, peeled, cored, and diced
  • ¼ cup raw honey
  • 1 tablespoon butter
  • ¼ cup milk of choice
  • Pinch of cinnamon
  • Pinch of nutmeg
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • ¼ cup raw, chopped pecans
  • 1 tablespoon Truvia brown sugar substitute (optional)

Apple Crisp Topping Instructions

  1. Prepare the apples and set aside.
  2. In a skillet over medium heat, add the butter and honey. Stir until melted and combined.
  3. Add the diced apples, chopped pecans, and optional brown sugar substitute. Cook until the apples are soft and tender, about 5–7 minutes.
  4. Stir in the cinnamon, nutmeg, vanilla extract, and milk. Simmer for 1 additional minute.
  5. Remove from heat and stir in the rolled oats until fully coated.

Assembly

  1. Remove the chia pudding from the fridge.
  2. Spoon the warm apple crisp topping evenly over the two servings of pudding.
  3. Enjoy immediately or refrigerate for later — delicious warm or chilled!
