Ingredients:
- 2 (1 1/4-pound) bone-in rib eye steaks
- Sea salt
- Freshly ground black pepper
- 2 tablespoons avocado oil
- 4 tablespoons unsalted butter
- 3 garlic cloves
- 2-3 rosemary sprigs
Instructions:
- Season the rib eye steaks all over with salt and freshly ground pepper. Allow meat to stand at room temperature for 30 minutes.
- In a large cast-iron skillet, heat the oil until it shimmers. Add the steaks and cook over high heat until crusty on the bottom, about 5 minutes.
- Turn the steaks and add the butter, garlic, and rosemary to the skillet. Cook over high heat, basting the steaks with the melted butter, garlic, and rosemary, until the steaks are medium, 8-9 minutes or until they reach an inner temperature of 135°F-140°F. For medium well, 11 minutes or until they reach 140°F-150°F.
- Transfer the steaks to a cutting board and let rest for 10 minutes. Cut the steaks off the bone, then slice the meat across the grain and serve.

Medium Rare (pink): 130°F-135°F; Estimated Cook Time: 9 minutes
Medium (light pink): 135°F-140°F; Estimated Cook Time: 10 minutes
Medium-Well: 140°F-150°F; Estimated Cook Time: 11 minutes
Well-Done: 155°F or above; Estimated Cook Time: 12 minutes or more
