Serves: 4
Ingredients:
- 4 mahi mahi filets, approximately 6 ounces each
- 2 tbsp butter
- 1 tbsp olive oil
- 1 lemon, sliced
- blackening season
Blackening Season Mix:
- 1 ½ tsp onion powder
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp dried thyme leaves
- 1 tsp dried oregano leaves
- 1 tsp fine grain sea salt
- ½ tsp freshly ground black pepper
- ½ tsp cayenne pepper or to taste
Instructions:
- Combine all blackening season mix ingredients in a small bowl.
- Pat filets dry with paper towels. Season the filets liberally with blackening season mix on both sides, pressing the seasoning into the fish with your hands. Wash hands thoroughly.
- Place a large sauté pan over medium-high heat and add butter and oil. When the fat is nice and hot, add the seasoned fish. Cook, undisturbed, for 3-4 minutes, or until golden brown on one side. Flip fish over and continue to cook until opaque and completely cooked through.
- Squeeze lemon juice over the fish and serve.
Note: This protein goes well paired with sauteed asparagus spears
