(Serves 2)

Ingredients:

  • 1 pound of ground beef
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 2 large lettuce leaves, washed and dried
  • 1/2 cup of sliced onions, in rings
  • 1/2 cup of sliced, fresh mushrooms
  • 1/4 cup of chopped sun-dried tomatoes
  • 1 tablespoon of olive oil
  • 1/4 teaspoon of garlic powder
  • 1/4 cup of grated cheddar cheese

 

Instructions:

  1. Preheat a skillet over medium heat. Add the olive oil and then the onions, mushrooms, and sun-dried tomatoes. Cook until the vegetables are softened, about 5 minutes. Season with garlic powder and salt and pepper to taste.
  2. In a large bowl, combine the ground beef, salt, and pepper. Mix well. Form the ground beef into four patties, each about 1/2 inch thick.
  3. Place the hamburger patties in the preheated skillet and cook over medium heat for 4-5 minutes per side, or until cooked through.
  4. To assemble the burgers, place a hamburger patty on each lettuce leaf. Top with the sauteed vegetables, cheddar cheese, and condiments of your choosing.
  5. Add second burger on top of your vegetables and fold the lettuce leaves in half to enjoy.

Tips:

  • Don’t like beef? You can make the same recipe using ground chicken, turkey or lamb
  • If you don’t have sun-dried tomatoes, you can substitute chopped roasted tomatoes or even chopped fresh tomatoes.
