Ingredients:
- 2 large eggs
- 1 (15 oz) can pumpkin puree (not pie filling)
- ½ cup + 2 tbsp maple syrup (or honey)
- 2 tbsp oil
- 2 tbsp pumpkin pie spice
- 2 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 2¼ cups spelt or whole wheat flour (or 2¾ cups all-purpose flour)
- ¾ cup dark chocolate chips
Instructions:
- Preheat oven to 350°F. Line a 9×5 loaf pan with parchment paper and spray.
- In a bowl, whisk eggs, then mix in pumpkin, sweetener, oil, spices, baking powder, baking soda, and salt.
- Stir in flour gently, then fold in chocolate chips.
- Pour batter into the pan, sprinkle remaining chocolate chips on top.
- Bake for 50-60 minutes. Cool before slicing.
Storage: Store in a cool place for up to 5 days.
