Serves: 8

Ingredients:

  • 2 large eggs
  • 1 (15 oz) can pumpkin puree (not pie filling)
  • ½ cup + 2 tbsp maple syrup (or honey)
  • 2 tbsp oil
  • 2 tbsp pumpkin pie spice
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 2¼ cups spelt or whole wheat flour (or 2¾ cups all-purpose flour)
  • ¾ cup dark chocolate chips

Instructions:

  1. Preheat oven to 350°F. Line a 9×5 loaf pan with parchment paper and spray.
  2. In a bowl, whisk eggs, then mix in pumpkin, sweetener, oil, spices, baking powder, baking soda, and salt.
  3. Stir in flour gently, then fold in chocolate chips.
  4. Pour batter into the pan, sprinkle remaining chocolate chips on top.
  5. Bake for 50-60 minutes. Cool before slicing.

Storage: Store in a cool place for up to 5 days.
