Serves:1

Ingredients:

  • 3 tbsp almond flour
  • 1 tbsp coconut flour
  • 1/2 tsp baking powder
  • 1 1/2 tbsp maple syrup
  • 1 egg
  • 1 tbsp milk (or nut milk)
  • 1 tbsp avocado oil (or coconut oil)
  • 1/2 tsp vanilla extract
  • 1-2 tbsp sugar-free chocolate chips

Instructions:

  1. Mix Dry Ingredients: In a microwave-safe mug, combine the almond flour, coconut flour, and baking powder. Stir until well combined.
  2. Add Wet Ingredients: Add the maple syrup, egg, milk, avocado (or coconut) oil, and vanilla extract. Stir thoroughly to form a smooth batter.
  3. Fold in Chocolate Chips: Gently fold in the chocolate chips, being careful to not over mix.
  4. Microwave: Microwave the mug on high for 2–2 1/2 minutes, depending on your microwave’s strength. Start checking around 2 minutes; the cake should be firm but moist when done.
  5. Cool Slightly & Enjoy: Let the mug cake cool for a minute before enjoying straight from the mug!

Tip: For a little added flavor, mix up a serving of peanut butter powder per the jar’s instructions and drizzle on top of your mug cake.
