(Serves 2)

Ingredients:

  • 2 chicken leg quarters
  • ¾ teaspoon salt
  • 1 teaspoon hot or smoked paprika
  • 1/2 teaspoon granulated garlic
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon olive oil

Instructions:

  1. Preheat the air fryer to 400 °F.
  2. Mix together the seasoning.
  3. Coat both sides of the chicken with olive oil and rub on the seasoning.
  4. Place the quarters, skin side down, into the air fryer, making sure that they’re not touching.
  5. Cook for 20 minutes, flip, and cook another 10-15 minutes or until it’s reached an internal temperature of 185 °F (85 °C). Let cool for 5 minutes and serve.

Note: For a little extra flavor, combine 2 tablespoons of melted butter, a squeeze of lemon juice and some black pepper for dipping.
