(Serves 4-6)
Ingredients:
- 1 lb. ground chicken
- 1 medium zucchini, diced
- 1 medium yellow squash, diced
- ½ medium red bell pepper, finely diced
- 3 green onions, thinly sliced
- 1 large egg, lightly beaten
- 1 cup shredded cheese of your choice
- 3 garlic cloves, minced
- 1 teaspoon ground cumin (or premade taco seasoning)
- 1 teaspoon salt
- ½ teaspoon freshly ground black pepper
- 3-4 tablespoons olive oil, for searing
Instructions:
- In a large bowl, combine the ground chicken, chopped zucchini, yellow squash, diced red bell pepper, sliced green onions, beaten egg, cheese, minced garlic, ground cumin, salt, and black pepper. Mix well until all ingredients are evenly distributed.
- Divide the mixture into equal portions and form into patties.
- Heat olive oil in a large skillet over medium heat. Place the patties in the skillet and cook for about 5-6 minutes on each side, or until fully cooked through and golden brown on the outside.
- Serve the chicken burgers on your favorite whole wheat or low carb buns
