(Serves 4)
Ingredients:
- 1 tbsp olive oil
- 2 tbsp butter
- 1 ½ lbs of brown button mushrooms (or other of your choosing), sliced thickly or leave whole
- Salt to taste
- 2 fresh stalks of fresh rosemary (or 1 tsp chopped, or ½ tsp dried)
- 3 cloves garlic, pressed
- 4 tbsp finely grated parmesan cheese, for serving
- 1 tbsp fresh parsley, chopped (or ½ tbsp dried)
Instructions:
- While mushrooms are delicious, they can still be quite dirty. Be sure to soak your mushrooms in a bowl of cold water, rinse and pat dry before using.
- Heat a large skillet with olive oil and butter, add the mushrooms cut side down if you’re cutting them, otherwise add them whole. Add rosemary.
- Sauté the mushrooms without disturbing them for 3-4 minutes or until the mushrooms are golden. Then turn them over and let them cook for 3-4 minutes longer.
- Once the mushrooms are cooked, add the pressed garlic and shake the pan. Let the garlic cook for 60 seconds, then season with salt to taste.
- Take mushrooms off the heat and serve with grated parmesan cheese and chopped fresh parsley.
