(Serves 4)

Ingredients:

  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 ½ lbs of brown button mushrooms (or other of your choosing), sliced thickly or leave whole
  • Salt to taste
  • 2 fresh stalks of fresh rosemary (or 1 tsp chopped, or ½ tsp dried)
  • 3 cloves garlic, pressed
  • 4 tbsp finely grated parmesan cheese, for serving
  • 1 tbsp fresh parsley, chopped (or ½ tbsp dried)

 

Instructions:

  1. While mushrooms are delicious, they can still be quite dirty. Be sure to soak your mushrooms in a bowl of cold water, rinse and pat dry before using.
  2. Heat a large skillet with olive oil and butter, add the mushrooms cut side down if you’re cutting them, otherwise add them whole. Add rosemary.
  3. Sauté the mushrooms without disturbing them for 3-4 minutes or until the mushrooms are golden. Then turn them over and let them cook for 3-4 minutes longer.
  4. Once the mushrooms are cooked, add the pressed garlic and shake the pan. Let the garlic cook for 60 seconds, then season with salt to taste.
  5. Take mushrooms off the heat and serve with grated parmesan cheese and chopped fresh parsley.
