(Serves 8)
Ingredients:
- ¾ cup walnuts
- 10 pitted Medjool dates
- ¼ cup canned pumpkin purée
- Pinch sea salt
- 1/4 cup unsweetened cocoa powder
- ½ teaspoon vanilla extract
- 1 tablespoon of monk fruit
Instructions:
- Place 1/3 cup of the walnuts in a food processor.
- Process until walnuts resemble bread crumbs. Transfer to a bowl and set aside.
- Add remaining walnuts to the food processor and process until finely ground.
- Add the dates, pumpkin purée, cocoa powder, salt, monk fruit and vanilla extract to the processor and continue to process until ingredients are combined and smooth.
- Using your hands, scoop and roll mixture into 8 equal balls.
- Roll each ball in the reserved walnuts (or powdered sugar substitute such as Swerve) and serve immediately or store in the freezer or the refrigerator.
Notes: You can use more or less sweetener depending on the sweetness level you would like to achieve. If freezing, note that the brownie balls will not be frozen solid. They are ready to eat in just minutes.
