Ingredients:
- 1 cup plain Greek yogurt (non-fat or low-fat)
- 1 cucumber, grated and drained
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 2 cloves garlic, minced
- 1 tablespoon fresh dill (or mint), chopped
- Salt and pepper to taste
Instructions:
- Grate the cucumber, then squeeze out excess water using a cloth or paper towel.
- In a bowl, mix Greek yogurt, cucumber, olive oil, lemon juice, garlic, and dill.
- Season with salt and pepper to taste.
- Chill for 30 minutes before serving.
