Serves: 8-10

Ingredients:

  • 1 cup plain Greek yogurt (non-fat or low-fat)
  • 1 cucumber, grated and drained
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon fresh dill (or mint), chopped
  • Salt and pepper to taste

Instructions:

  1. Grate the cucumber, then squeeze out excess water using a cloth or paper towel.
  2. In a bowl, mix Greek yogurt, cucumber, olive oil, lemon juice, garlic, and dill.
  3. Season with salt and pepper to taste.
  4. Chill for 30 minutes before serving.
