Ingredients:
- ½ tablespoon butter (for greasing pan)
- 4 large eggs
- ½ cup honey (real or sugar-free)
- 1 tablespoon vanilla extract
- 1½ cups almond flour (blanched, finely ground)
- ¼ teaspoon salt
- ½ teaspoon baking soda (or 2 teaspoons gluten-free baking powder)
Instructions:
- Preheat oven to 350°F. Grease an 8-inch cake pan with butter.
- In a bowl, whisk eggs. Gradually add honey, vanilla, almond flour, salt, and baking soda. Do not over-mix.
- Pour batter into the pan.
- Bake for 22-25 minutes, until a toothpick comes out clean.
- Cool for 10 minutes in the pan, then invert onto a rack for 20 minutes. Optional: dust with powdered sweetener before serving.
