Ingredients:

  • ½ tablespoon butter (for greasing pan)
  • 4 large eggs
  • ½ cup honey (real or sugar-free)
  • 1 tablespoon vanilla extract
  • 1½ cups almond flour (blanched, finely ground)
  • ¼ teaspoon salt
  • ½ teaspoon baking soda (or 2 teaspoons gluten-free baking powder)

Instructions:

  1. Preheat oven to 350°F. Grease an 8-inch cake pan with butter.
  2. In a bowl, whisk eggs. Gradually add honey, vanilla, almond flour, salt, and baking soda. Do not over-mix.
  3. Pour batter into the pan.
  4. Bake for 22-25 minutes, until a toothpick comes out clean.
  5. Cool for 10 minutes in the pan, then invert onto a rack for 20 minutes. Optional: dust with powdered sweetener before serving.
