(Serves 12)

Ingredients:

  • 1/2 cup quality cocoa powder
  • 1 cup granulated sweetener such as allulose, monk fruit or Truvia brand stevia
  • 1/8 teaspoon sea salt
  • 1/2 cup water room temperature
  • 1 teaspoon vanilla extract

Instructions:

  1. In a small bowl, whisk together the cocoa powder, sweetener, and salt.
  2. Pour the dry ingredients into a small saucepan. Add the water and whisk once to combine everything.
  3. Place the saucepan over medium heat and bring it to a boil. Then, reduce the heat to low and simmer the mixture for 1-2 minutes, stirring regularly to prevent scorching.
  4. Remove the saucepan from the heat and whisk in the vanilla extract. Let the syrup cool completely at room temperature.
  5. Once cool, transfer the syrup to a shallow container or jar and refrigerate for at least an hour to thicken up completely.

Note: The consistency will be like a thick fudge sauce. Heat slightly before using if you plan to use it like a syrup. This makes a delicious hot cocoa!
