(Serves 12)
Ingredients:
- 1/2 cup quality cocoa powder
- 1 cup granulated sweetener such as allulose, monk fruit or Truvia brand stevia
- 1/8 teaspoon sea salt
- 1/2 cup water room temperature
- 1 teaspoon vanilla extract
Instructions:
- In a small bowl, whisk together the cocoa powder, sweetener, and salt.
- Pour the dry ingredients into a small saucepan. Add the water and whisk once to combine everything.
- Place the saucepan over medium heat and bring it to a boil. Then, reduce the heat to low and simmer the mixture for 1-2 minutes, stirring regularly to prevent scorching.
- Remove the saucepan from the heat and whisk in the vanilla extract. Let the syrup cool completely at room temperature.
- Once cool, transfer the syrup to a shallow container or jar and refrigerate for at least an hour to thicken up completely.
Note: The consistency will be like a thick fudge sauce. Heat slightly before using if you plan to use it like a syrup. This makes a delicious hot cocoa!
