(Serves 6-8)

Ingredients:

 

  • 1/2 cup mint, finely chopped
  • 1/2 pomegranate, arils removed
  • 1/2 lime, juice squeezed
  • ½  teaspoon sea salt flakes
  • 1 tsp of low sodium Tajin, optional
  • 2 cups of homemade or store bought hummus

 

Instructions:

 

  1. Finely chop your mint and combine it in a bowl with your pomegranate arils, lime juice and salt.
  2. Place your hummus into a serving bowl or plate and top with your pomegranate mint salsa.
  3. The Tajin is 100% optional but it definitely helps bring out the flavor. If choosing to use the Tajin, sprinkle the entire teaspoon across the top of your hummus and salsa.
  4. Use your hummus and pomegranate mint salsa on sandwiches, salads or as a dip for veggies or whole wheat crackers.
